Prepare the Oysters
In a mixing bowl, combine the cornmeal, flour, salt, and black pepper. In another bowl, whisk together the eggs and milk.

Fry the Oysters
Heat vegetable oil in a deep skillet over medium-high heat. Once hot, carefully add the oysters in batches and fry until golden brown, about 2-3 minutes per side. Remove and drain on paper towels.

Prepare the Spicy Mayo
In a small bowl, mix together the mayonnaise and hot sauce to create the spicy mayo.

Assemble the Poboy
Slice the French bread loaves in half. Spread a generous amount of spicy mayo on both sides. Add a layer of lettuce, followed by slices of tomato, and top with the fried oysters.

Serve
Close the sandwich, slice in half, and serve immediately with extra spicy mayo, if desired.
