Prepare the Alligator Bites
Soak the alligator meat in buttermilk for at least 1 hour in the refrigerator.

Mix the Coating
In a bowl, mix the flour, cornmeal, cajun seasoning, salt, and black pepper.

Heat the Oil
In a deep fryer or large pot, heat oil to 350°F (175°C).

Coat and Fry the Alligator
Remove the alligator pieces from the buttermilk, allowing excess to drip off. Dredge them in the flour mixture until well coated, then carefully place them in the hot oil. Fry in batches until golden brown, about 3-4 minutes. Drain on paper towels.

Prepare the Poboy
Slice French bread lengthwise and spread spicy mayo on both sides. Layer with lettuce, tomato slices, and fried alligator bites.

Serve
Cut the poboy into manageable sections and serve immediately.
