Gumbo Preparation

    Cook the Sausage and Chicken

    In a large pot over medium heat, add olive oil and heat until shimmering. Add the andouille sausage and cook until browned, about 5 minutes. Remove and set aside. In the same pot, add the chicken thighs and cook until browned, about 5-7 minutes. Remove and set aside.

    Sauté the Vegetables

    Add the diced green bell pepper, onion, celery, and minced garlic to the pot. Sauté until the vegetables are soft, about 5 minutes.

    Combine Ingredients

    Return the sausage and chicken to the pot. Add the canned tomatoes, chicken broth, bay leaves, and Cajun seasoning. Bring to a boil, then reduce heat and simmer for 30 minutes.

    Season and Serve

    Remove bay leaves and season with salt and black pepper to taste. Serve hot.

Potato Salad Preparation

    Prepare Potatoes

    Boil the potatoes in salted water until fork-tender, about 15-20 minutes. Drain and let cool, then peel and chop into cubes.

    Mix Salad Ingredients

    In a large bowl, combine the chopped potatoes, mayonnaise, Dijon mustard, chopped celery, and sliced green onions. Mix well.

    Season and Chill

    Season with salt and black pepper to taste. Refrigerate for at least 30 minutes before serving.
