    Sauté the Vegetables

    In a large pot, heat the olive oil over medium heat. Add the chopped onion, green bell pepper, and celery. Sauté for about 5 minutes until the vegetables are softened.

    Add Garlic and Sausage

    Stir in the minced garlic and sliced andouille sausage. Cook for another 2-3 minutes until fragrant.

    Cook Chicken

    Add the diced chicken breast to the pot. Cook until the chicken is no longer pink, about 5-7 minutes.

    Combine Other Ingredients

    Stir in the canned diced tomatoes (with juice), chicken broth, long-grain rice, Cajun seasoning, bay leaves, salt, and black pepper.

    Simmer

    Bring the mixture to a boil, then reduce heat to low. Cover and let simmer for about 20-25 minutes, or until the rice is cooked and has absorbed the liquid.

    Garnish and Serve

    Remove bay leaves and fluff the jambalaya with a fork. Serve hot, garnished with sliced green onions.
