    Prepare the Fish

    Pat the Gulf Redfish fillets dry with paper towels. Generously coat both sides of the fillets with blackening seasoning.

    Heat the Pan

    In a large cast-iron skillet, heat the olive oil over medium-high heat until it shimmers.

    Blacken the Fish

    Carefully place the seasoned fillets in the hot skillet. Cook for about 3-4 minutes per side, or until the fish is cooked through and has a charred crust. Remove from the skillet and set aside.

    Cook the Vegetables

    In the same skillet, add butter and seasonal vegetables. Sauté over medium heat until the vegetables are tender, about 5-7 minutes.

    Serve

    Plate the blackened redfish alongside the sautéed seasonal vegetables. Serve with lemon wedges on the side.
