Prepare the Meat
Cut the pork shoulder and fatback into small chunks and place them in a large bowl.

Add the minced garlic, paprika, cayenne pepper, black pepper, salt, thyme, and crushed red pepper flakes to the bowl. Mix well until the meat is thoroughly coated with the spices.

Grind the Mixture
Using a meat grinder, grind the seasoned meat mixture through a medium-hole plate into a large bowl.

Stuff the Sausage
Rinse the hog casings in cold water and soak them. Fit the casing onto the sausage stuffer and fill with the sausage mixture, being careful not to overstuff. Twist into links of desired length.
