Preparing the Omelette

    Cook the Alligator Sausage

    Heat olive oil or butter in a skillet over medium heat. Add the diced alligator sausage and cook until browned.

    Add Vegetables

    Stir in the diced red bell pepper and onion. Sauté until the vegetables are tender.

    Prepare the Eggs

    In a bowl, whisk together the eggs, cracked black pepper, and salt to taste.

    Combine and Cook

    Pour the egg mixture into the skillet, covering the sausage and vegetables. Cook until the edges begin to set, then sprinkle cheddar cheese on top.

    Finish Cooking

    Using a spatula, gently fold the omelette in half and cook for an additional 1-2 minutes until the cheese is melted and the eggs are fully cooked.

Preparing the Grits or Potato Hash

    Cook the Grits

    In a saucepan, bring 4 cups of water to a boil. Stir in the stoned ground grits and reduce heat to low. Cook according to package instructions, usually about 20-25 minutes, stirring occasionally. Finish with butter and salt.

    In another skillet, heat olive oil over medium heat. Add diced potatoes and onion. Season with salt and pepper. Cook until potatoes are golden brown and tender, about 15-20 minutes.
