    Prepare the Dipping Sauce

    In a small bowl, mix together mayonnaise, Sriracha sauce, and lemon juice. Adjust the spiciness to your liking by adding more Sriracha if desired. Set aside.

    Make the Tempura Batter

    In a large mixing bowl, combine the flour, cornstarch, baking powder, and salt. Gradually whisk in the cold water until just combined. The batter should be a little lumpy; do not overmix.

    Heat the Oil

    In a deep pot or fryer, heat the vegetable oil to 350°F (175°C). Use a thermometer for accuracy.

    Batter and Fry the Shrimp

    Dip each shrimp into the tempura batter, allowing the excess to drip off. Carefully place the shrimp in the hot oil, frying in batches to avoid overcrowding. Fry until golden brown, about 2-3 minutes, then remove and drain on paper towels.

    Serve the crispy tempura shrimp hot with the mayo-based dipping sauce on the side.
