1. Prepare the Broth
In a large pot, add the beef shank or brisket, beef broth, chopped onion, minced garlic, sliced carrots, and sliced celery. Bring to a boil over medium-high heat.
2. Simmer
Once boiling, reduce the heat to low and let simmer for 1.5 to 2 hours, or until the beef is tender and easily shreds with a fork.
3. Cook the Noodles
Remove the beef from the pot and set aside. Add the egg noodles to the broth and cook according to package instructions.
4. Shred the Beef
While the noodles are cooking, shred the beef into bite-sized pieces.
5. Combine and Season
Once the noodles are cooked, return the shredded beef to the pot. Stir in the soy sauce, and season with salt and black pepper to taste.
6. Serve
Ladle the soup into bowls and garnish with chopped green onions and fresh cilantro. Serve hot.
