    Prepare the Noodles

    Soak the rice vermicelli noodles in warm water for about 10 minutes or until softened. Drain and set aside.

    Cook the Eggs

    In a wok, heat 1 tablespoon of vegetable oil over medium heat. Beat the eggs and pour them into the wok, scrambling until fully cooked. Remove the eggs from the wok and set aside.

    Stir-Fry the Vegetables

    In the same wok, add the remaining tablespoon of vegetable oil. Add the red onion, carrot, cabbage, and spring onion. Stir-fry for about 3-4 minutes until the vegetables are slightly tender.

    Add Shrimp and Sauce

    Add the shrimp to the wok, cooking until they turn pink. Stir in the curry powder and soy sauce, mixing well.

    Combine Everything

    Add the soaked noodles, bean sprouts, diced tomato, and scrambled eggs back into the wok. Toss everything together until well combined and heated through. Season with salt and pepper to taste.
