Prepare the Ingredients
Slice the pork tenderloin into thin strips. Chop the carrots, cabbage, tomato, red onion, and green onions. Rinse the bean sprouts.

Cook the Eggs
In a large wok or skillet, heat 1 tablespoon of vegetable oil over medium heat. Beat the eggs and pour them into the pan, scrambling until fully cooked. Remove and set aside.

Stir-Fry the Pork
In the same wok, add another tablespoon of vegetable oil. Add the sliced pork and stir-fry until browned and cooked through, about 5-7 minutes.

Add Vegetables
Add the carrots, cabbage, red onion, and green onions to the pork, and stir-fry for another 3-4 minutes until the vegetables are tender.

Add Noodles and Seasonings
Cook the Mei Fun noodles according to package instructions. Drain and add to the wok along with the bean sprouts, curry powder, soy sauce, salt, and pepper. Toss everything together until well combined and heated through.

Finish and Serve
Gently fold in the scrambled eggs and diced tomato. Serve hot, garnished with additional green onions if desired.
