Prepare the Filling
In a skillet, heat 1 tablespoon of vegetable oil over medium heat. Add the ground pork and cook until browned, about 5-7 minutes. Stir in the minced garlic, grated ginger, soy sauce, salt, and black pepper. Cook for another 2-3 minutes until well combined. Remove from heat and let cool slightly.

Assemble the Egg Rolls
Lay an egg roll wrapper on a clean surface with a corner pointing towards you. Place about 2 tablespoons of the pork filling and a tablespoon of diced lettuce in the center of the wrapper. Fold the bottom corner over the filling, then fold in the sides and roll tightly. Seal the top corner with a little water.

Fry the Egg Rolls
In a deep skillet or pot, heat the remaining tablespoon of vegetable oil over medium-high heat. Once hot, add the egg rolls, cooking until they are golden brown and crispy, about 3-4 minutes per side. Remove and drain on paper towels.

Serve
Serve the pork egg rolls hot, with your choice of dipping sauce.
