Prepare the Noodles
Cook the noodles according to package instructions. Drain and set aside.

Stir-fry the Chicken
In a large wok or frying pan, heat 1 tablespoon of vegetable oil over medium-high heat. Add the sliced chicken breast and stir-fry until cooked through, about 5-7 minutes. Remove from the wok and set aside.

Cook the Eggs
In the same wok, add another tablespoon of vegetable oil. Crack the eggs into the wok and scramble them until fully cooked. Remove and set aside with the chicken.

Stir-fry Vegetables
Add the red onion, carrots, and cabbage to the wok and stir-fry for about 3 minutes until they start to soften. Then add the bean sprouts, tomato, and spring onion, and stir-fry for another 2 minutes.

Serve
Serve hot, garnished with extra spring onion if desired.
