Prepare the Mei Fun
Soak the mei fun in hot water for about 10 minutes until softened, then drain and set aside.

Cook the Chicken
In a large wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add the sliced chicken and stir-fry until cooked through, about 5-7 minutes. Remove from the wok and set aside.

Stir-Fry Vegetables
Add the remaining tablespoon of vegetable oil to the wok. Stir-fry the red onion, carrot, and cabbage for 2-3 minutes until slightly tender. Add the bean sprouts, tomato, and green onion, and stir-fry for another 2 minutes.

Combine Ingredients
Add the cooked chicken, softened mei fun, and curry sauce to the wok. Toss everything together and season with salt and pepper to taste. Stir-fry for another 2-3 minutes until heated through.
