Prepare the Chicken
Cut the boneless chicken breast into bite-sized pieces. Season with salt and black pepper.

Set Up Breading Station
In one bowl, place the flour. In a second bowl, beat the eggs. In a third bowl, combine the cornstarch and bread crumbs.

Bread the Chicken
Dredge each piece of chicken in flour, then dip in the egg, and finally coat with the cornstarch and bread crumb mixture.

Heat the Oil
In a large frying pan or deep fryer, heat the vegetable oil over medium-high heat until hot.

Carefully add the breaded chicken pieces to the hot oil in batches. Fry until golden brown and crispy, about 5-7 minutes. Remove and drain on paper towels.
