Prepare the Chicken
Preheat the grill to medium-high heat. Season the chicken breasts with salt, pepper, and your favorite spices. Grill for about 6-7 minutes on each side, or until fully cooked and the internal temperature reaches 165°F (75°C).

Fry the Jalapeños
While the chicken is grilling, heat a small amount of oil in a frying pan over medium heat. Slice the jalapeños into rings and fry until crispy, about 3-5 minutes. Set aside.

Assemble the Sandwich
Once the chicken is cooked, place it on a cutting board and slice it into strips. Slice the French loaf in half and toast lightly if desired. Spread a generous amount of chipotle mayo on both sides of the loaf.

Add the Toppings
Layer the grilled chicken strips, fried jalapeños, pepperjack cheese, red onion, roasted red peppers, and arugula on the bottom half of the French loaf. Place the top half of the loaf on and press down gently.
