    Prepare the Vegetables

    Preheat the oven to 400°F (200°C). Cut the eggplant, zucchini, yellow squash, and onion into bite-sized pieces. Toss them with olive oil, salt, and pepper.

    Roast the Vegetables

    Spread the vegetables on a baking sheet and roast in the preheated oven for about 25-30 minutes, or until tender and slightly caramelized.

    Make the Basil Mayo

    In a bowl, combine mayonnaise with chopped fresh basil. Mix well and adjust salt and pepper to taste.

    Assemble the Sandwich

    Slice the French loaf in half lengthwise. On the bottom half, spread a generous layer of tomato sauce, followed by the roasted vegetables, slices of provolone cheese, and roasted red peppers.

    Bake the Sandwich

    Place the assembled sandwich in the oven and bake for 10-15 minutes, or until the cheese is melted and bubbly.

    Finish and Serve

    Remove from the oven, add a layer of arugula on top, spread the basil mayo on the top half of the loaf, close the sandwich and slice it into portions to serve.
