Preparation

Preparing the Turkey

1. Roast the Turkey

Preheat the oven to 350°F (175°C). Rub the turkey breast with olive oil, salt, pepper, and fresh herbs. Place in a roasting pan and roast for about 1.5 hours or until the internal temperature reaches 165°F (75°C). Let rest before slicing.

2. Make the Herb Mayo

In a bowl, combine mayonnaise with additional herbs and season to taste. Set aside.

Making the Relish

3. Prepare the Cranberry-Pecan Relish

In a saucepan, combine cranberries, sugar, orange juice, and orange zest. Cook over medium heat until cranberries burst and mixture thickens. Stir in chopped pecans and let cool.

Cooking the Mashed Potatoes

4. Prepare the Mashed Potatoes

Boil the cubed potatoes in salted water until tender. Drain and mash with butter, milk, salt, and pepper until creamy. Set aside.

Making the Stuffing

5. Prepare the Cornbread & Apple Stuffing

In a large bowl, combine crumbled cornbread, diced apples, celery, onion, sage, salt, and pepper. Pour in chicken broth until moistened. Bake at 350°F (175°C) for 30 minutes.

Making the Gravy

6. Prepare the Gravy Dunker

In a saucepan, combine turkey drippings with flour to create a roux. Gradually whisk in water and cook until thickened. Season to taste.

Assembling the Sandwich

7. Assemble the Sandwich

Slice the French loaf and layer with sliced turkey, herb mayo, cranberry-pecan relish, and stuffing. Serve with gravy dunker on the side.
