Preparing the Turkey
1. Roast the Turkey
Preheat the oven to 350°F (175°C). Rub the turkey breast with olive oil, salt, pepper, and fresh herbs. Place in a roasting pan and roast for about 1.5 hours or until the internal temperature reaches 165°F (75°C). Let rest before slicing.
2. Make the Herb Mayo
In a bowl, combine mayonnaise with additional herbs and season to taste. Set aside.

In a saucepan, combine cranberries, sugar, orange juice, and orange zest. Cook over medium heat until cranberries burst and mixture thickens. Stir in chopped pecans and let cool.
