Preparation Steps
1. Prepare the Beef
Preheat your oven to 300°F (150°C). Season the beef roast with salt and pepper. Place it in a roasting pan and cover it tightly with foil. Roast for 4-5 hours until the meat is tender and easily shredded.
2. Make the Chipotle BBQ Sauce
In a medium saucepan over medium heat, combine ketchup, apple cider vinegar, brown sugar, chopped chipotle peppers, garlic powder, onion powder, smoked paprika, salt, and black pepper. Stir well and let it simmer for 15-20 minutes until thickened.
3. Cook the Bacon
In a skillet, cook the bacon slices over medium heat until crispy. Remove from the skillet and drain on paper towels.
4. Assemble the Sandwich
Once the beef is cooked, shred it using two forks. Toast the brioche buns lightly. On the bottom half of each bun, layer shredded beef, a slice of white cheddar, crispy bacon, pickled jalapeños, and onion rings. Drizzle with the chipotle BBQ sauce. Top with the other half of the bun.
5. Serve
Serve immediately while warm, with extra chipotle BBQ sauce on the side if desired.
