    Prepare the Salmon

    Pat the salmon fillets dry with paper towels. Coat both sides of the salmon evenly with blackening spice.

    Cook the Salmon

    Heat a skillet or grill over medium-high heat. Add a little oil to the pan if using a skillet. Cook the salmon for 4-5 minutes on each side until blackened and cooked to your liking.

    Prepare the Vegetables

    While the salmon is cooking, thinly slice the red onion and tomato.

    Make the Lemon Dill Aioli

    In a small bowl, mix together mayonnaise, fresh dill, lemon juice, salt, and pepper to taste.

    Assemble the Sandwich

    Spread a generous amount of the lemon dill aioli on the inside of each ciabatta roll. Layer arugula, followed by the cooked salmon, sliced red onion, and tomato. Close the sandwich and serve immediately.
