Prepare the Roast Beef
Preheat the oven to 300°F (150°C). Season the roast beef with salt and pepper, and place it in a roasting pan. Roast for 3-4 hours or until it reaches your desired doneness. Let it rest for 20 minutes before slicing.

Caramelize the Onions
In a skillet over medium heat, add a tablespoon of olive oil. Add sliced onions and cook, stirring occasionally, until they are golden brown and caramelized, about 20-25 minutes.

Prepare Roasted Red Peppers
If using fresh red peppers, roast them over an open flame or in the oven until the skin is charred. Place them in a bowl covered with plastic wrap for 10 minutes, then peel off the skin and slice.

Assemble the Sandwich
Layer the sliced roast beef on a slice of sourdough bread. Top with caramelized onions, roasted red peppers, provolone cheese, and a generous spread of horseradish mayo. Close the sandwich with another slice of sourdough.

Slice the sandwich in half and serve warm.
