Roast the Beef
Preheat your oven to 300°F (150°C). Rub the roast beef with olive oil, salt, black pepper, garlic powder, and onion powder. Place it in a roasting pan.

Slow Roast
Roast in the preheated oven for about 3-4 hours, or until the internal temperature reaches 135°F (57°C) for medium-rare. Let the beef rest for 15 minutes before slicing.

Prepare the Slaw
In a bowl, combine the coleslaw mix with a little salt and pepper. Toss to combine and set aside.

Assemble the Sandwich
Spread chipotle mayo on one side of each brioche slice. Layer with sliced roast beef, cheddar cheese, and coleslaw. Top with another slice of brioche.

Serve the sandwiches with extra chipotle mayo on the side for dipping.
