Directions

  1. 1

    Prepare the Portobello Mushrooms

Preheat your oven to 400°F (200°C). Clean the portobello mushrooms and remove the stems. Place them on a baking sheet, drizzle with olive oil, and season with salt and pepper. Roast in the oven for about 20 minutes or until tender.

  2. 2

    Caramelize the Onions

In a skillet over medium heat, add a tablespoon of olive oil. Add the sliced onions and cook slowly, stirring occasionally, until they are golden brown and caramelized (about 15 minutes).

  3. 3

    Prepare the Herb Mayo

In a small bowl, mix the mayonnaise with the chopped fresh herbs. Adjust seasoning with salt and pepper to taste.

  4. 4

    Assemble the Portobello Caprese Sandwich

Slice the French loaf in half horizontally. Spread a generous amount of herb mayo on both sides. Layer the roasted portobello mushrooms, caramelized onions, sliced tomatoes, and fresh mozzarella on the bottom half. Drizzle with balsamic vinegar, then cap with the top half of the loaf.

  5. 5

    Serve

Slice the sandwich into portions and serve immediately. Enjoy your Portobello Caprese!
