    Prepare the Roast

    Preheat your oven to 300°F (150°C). In a large skillet, heat olive oil over medium-high heat. Season the chuck roast with salt and black pepper, then sear it in the skillet until browned on all sides, about 4-5 minutes per side.

    Slow Roast

    Transfer the seared roast to a roasting pan. In the same skillet, add sliced onion and minced garlic, sautéing until fragrant. Add the beef broth, thyme, and bay leaves, bringing it to a simmer. Pour the broth mixture over the roast, cover with foil, and bake for 3-4 hours or until the meat is tender.

    Prepare the Au Jus

    Once the roast is cooked, remove it from the oven and let it rest for 15 minutes. Strain the cooking liquid into a saucepan, discarding the solids. Bring to a simmer over low heat to reduce slightly, if desired.

    Assemble the Sandwiches

    Slice the roast thinly. Cut the French loaves in half and layer with slices of roast beef and Swiss cheese. Place the sandwiches on a baking sheet and broil for 2-3 minutes until the cheese is melted and bubbly.

    Serve the sandwiches hot with a small bowl of the au jus for dipping.
