Crab Cake and Sandwich Components

Method

Preparation and Cooking

  1. 1

    Make the Crab Cakes

In a mixing bowl, combine crab meat, mayonnaise, Dijon mustard, Old Bay seasoning, egg, and bread crumbs. Mix gently to combine without breaking the crab meat too much.

  2. 2

    Form the Cakes

Shape the mixture into patties (about 2-3 inches in diameter).

  3. 3

    Cook the Crab Cakes

Heat a skillet over medium heat and add a little butter. Cook the crab cakes for about 4-5 minutes on each side until golden brown and cooked through. Remove from skillet and set aside.

  4. 4

    Assemble the Sandwich

On a slice of brioche, layer one slice of cheddar cheese, followed by a crab cake, a slice of pepper jack cheese, tomato slices, and a generous drizzle of remoulade sauce. Top with another slice of brioche.

  5. 5

    Grill the Sandwich

In the same skillet, melt more butter over medium heat. Grill the sandwich for about 3-4 minutes on each side until the bread is golden brown and the cheese is melted.

  6. 6

    Serve

Cut the sandwich in half and serve hot with extra remoulade sauce on the side.
