Crust Preparation

    Preheat the Oven

    Preheat your oven to 350°F (175°C).

    Combine Crust Ingredients

    In a medium bowl, mix together the graham cracker crumbs, granulated sugar, melted butter, and salt until well combined.

    Form the Crust

    Press the mixture firmly into the bottom of a 9-inch springform pan to form an even layer.

    Bake the Crust

    Bake the crust in the preheated oven for 8-10 minutes, or until lightly golden. Remove from the oven and let cool while preparing the filling.

Filling Preparation

    Beat Cream Cheese

    In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy.

    Add Sugar and Sour Cream

    Gradually add the granulated sugar and continue to beat until well combined. Then add the sour cream and vanilla extract, mixing until smooth.

    Incorporate Eggs

    Add the eggs one at a time, mixing on low speed after each addition until just combined. Do not over-mix.

    Add Cornstarch and Lemon Juice

    Gently fold in the cornstarch and lemon juice until fully incorporated.

    Pour into Crust

    Pour the cheesecake filling into the cooled crust, spreading it evenly.

    Bake the Cheesecake

    Bake in the preheated oven for 55-65 minutes, or until the center is set but still slightly jiggly.

    Cool and Chill

    Turn off the oven and let the cheesecake cool in the oven with the door slightly ajar for about 1 hour. Then refrigerate for at least 4 hours, preferably overnight.
