Mousse Preparation
Melt the Chocolate and Butter
In a heatproof bowl, combine the dark chocolate and butter. Place the bowl over a pot of simmering water (double boiler method) and stir until melted and smooth. Remove from heat and let cool slightly.
Whisk Eggs and Sugar
In a separate mixing bowl, whisk the eggs and sugar together until the mixture is pale and slightly thickened. This should take about 3-4 minutes.
Combine Mixtures
Gradually add the melted chocolate mixture into the egg mixture, stirring continuously until fully combined. Add the vanilla extract and a pinch of salt, mixing well.
Chill the Mousse
Pour the mousse into individual serving cups or a large dish. Cover with plastic wrap and refrigerate for at least 2 hours or until set.
Whipped Cream Preparation
Prepare the Whipped Cream
In a mixing bowl, combine the heavy cream, powdered sugar, and vanilla extract. Use an electric mixer to whip until soft peaks form.
Serve
Once the mousse is set, top each serving with a dollop of whipped cream before serving.
