Preparation
Prepare the Peaches
Wash the peaches thoroughly under running water. Cut them in half and remove the pits. You can leave the skin on or peel them based on your preference.
Pickling Solution
Simmer
Reduce the heat and let the mixture simmer for about 5 minutes to allow the flavors to meld.
Canning
Pack Peaches
Place the prepared peach halves into sterilized jars, packing them tightly but without crushing.
Add Pickling Liquid
Pour the hot pickling solution over the peaches in the jars, ensuring they are completely submerged. Leave about 1/2 inch of headspace at the top of each jar.
Refrigerate
Once cooled, refrigerate the jars. Let the pickled peaches sit for at least 24 hours before consuming to allow the flavors to develop.
