Soak the Chickpeas

Soak the garbanzo beans in water overnight, or for at least 8 hours, until they are soft.

Prepare the Mixture

In a food processor, combine the soaked garbanzo beans, leeks, garlic, cilantro, parsley, onion, baking soda, baking powder, water, salt, chili powder, coriander, and cumin. Blend until the mixture is coarsely ground but not pureed.

Form the Falafel Balls

Using wet hands, form the mixture into small balls or patties, about 1 to 1.5 inches in diameter.

Fry the Falafel

Heat oil in a deep skillet over medium heat. Fry the falafel balls in batches until they are golden brown and crispy, about 4-5 minutes per side.

Drain and Serve

Remove the falafel from the oil and drain on paper towels. Serve warm with tahini sauce or in pita bread with fresh vegetables.
