    Dice the boneless chicken into bite-sized pieces. Peel and cube the potatoes into 1-inch pieces. Finely chop the onion, garlic, and ginger.

Cooking

    In a large pot or skillet, heat the vegetable oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.

    Add the minced garlic and ginger to the pot. Cook for another 2 minutes until fragrant.

    Add the diced boneless chicken to the pot. Cook until the chicken is browned on all sides, about 5-7 minutes.

    Add Vindaloo Paste

    Stir in the vindaloo paste, ensuring the chicken is well-coated. Cook for 2-3 minutes.

    Add Potatoes and Coconut Milk

    Add the cubed potatoes and coconut milk. Stir to combine and bring to a gentle simmer.

    Reduce the heat to low, cover, and let it simmer for 20-25 minutes, or until the chicken is cooked through and the potatoes are tender.
