    Prepare the Ingredients

    Wash and cut the boneless beef into 1-inch cubes. Peel and cube the potatoes. Finely chop the onions, mince the garlic and ginger, and chop the tomatoes.

    Toast the Spices

    In a dry skillet over medium heat, toast the cumin and coriander seeds until fragrant, about 2-3 minutes. Allow to cool slightly, then grind them in a spice grinder or mortar and pestle.

    Cook the Onions

    In a large pot or Dutch oven, heat the vegetable oil over medium heat. Add the chopped onions and cook until golden brown, about 8-10 minutes.

    Add Ginger and Garlic

    Stir in the minced garlic and ginger, cooking for an additional 1-2 minutes until aromatic.

    Add Tomatoes and Spices

    Add the chopped tomatoes, ground cumin, ground coriander, turmeric powder, red chili powder, garam masala, and salt to the pot. Cook for about 5 minutes until the tomatoes break down and the mixture becomes fragrant.

    Brown the Beef

    Add the cubed beef to the pot, stirring to coat the meat with the spice mixture. Cook for about 5-7 minutes until the beef is browned on all sides.

    Add Potatoes and Water

    Add the cubed potatoes and water to the pot, stirring to combine all ingredients. Bring to a boil.

    Simmer

    Reduce heat to low, cover the pot, and let it simmer for about 1.5 to 2 hours, or until the beef is tender and the potatoes are cooked through. Stir occasionally and adjust seasoning with more salt if needed.
