Preparation of Veggie Manchurian Balls

Mix the Vegetables
In a large mixing bowl, combine the finely chopped cauliflower, grated carrot, finely chopped green beans, and finely chopped cabbage. Mix well.

Add Binding Ingredients
Add all-purpose flour, cornstarch, ginger-garlic paste, salt, and black pepper powder to the vegetable mixture. Mix until all ingredients are well combined and form a dough-like consistency.

Shape the Balls
Grease your hands with a little oil, take small portions of the mixture, and roll them into small balls, about 1 inch in diameter.
Frying the Manchurian Balls

Heat the Oil
In a deep frying pan, heat the oil over medium heat until hot.

Fry the Balls
Carefully drop the shaped veggie balls into the hot oil. Fry in batches until they are golden brown and crispy, about 4-5 minutes per batch. Remove and drain on paper towels.
Preparation of the Sauce

Heat Oil for Sauce
In a separate pan, heat 2 tablespoons of oil over medium heat.

Sauté Aromatics
Add minced garlic, minced ginger, and finely chopped green chili to the pan. Sauté for 1-2 minutes until fragrant.

Add Sauces
Stir in soy sauce, tomato ketchup, and vinegar. Mix well and cook for another 2 minutes.

Thicken the Sauce
Add the cornstarch mixed with water to the sauce, stirring continuously until the sauce thickens. Season with salt and black pepper to taste.
Combine and Serve

Add the fried veggie manchurian balls to the sauce and gently toss to coat them evenly.

Garnish with chopped spring onions and serve hot with steamed rice or noodles.
