Marinade
Method
Preparation
- 1
Prepare the Marinade
In a large bowl, combine yogurt, ginger paste, garlic paste, red chili powder, turmeric powder, garam masala, lemon juice, salt, and vegetable oil. Mix well to create a smooth marinade.
- 2
Marinate the Chicken
Add the chicken leg pieces to the marinade, ensuring they are well coated. Cover the bowl with plastic wrap and refrigerate for at least 2 hours, preferably overnight for the best flavor.
Cooking
- 3
Preheat the Tandoor
Preheat the tandoor oven to a high temperature, around 450°F (232°C). If using a conventional oven, set it to broil.
- 4
Skewering the Chicken
Remove the marinated chicken from the refrigerator. Thread each leg piece onto a skewer, ensuring they are secure.
- 5
Roasting the Chicken
Place the skewers in the preheated tandoor or oven. Roast for about 25-30 minutes, turning occasionally, until the chicken is cooked through and has a nice char on the outside.
- 6
Serve
Once cooked, remove the skewers from the tandoor or oven. Let the chicken rest for a few minutes before serving. Serve hot with mint chutney and onion rings.
