Dough Preparation

    Activate Yeast

    In a small bowl, combine warm water, sugar, and yeast. Let it sit for about 5-10 minutes until frothy.

    Make Dough

    In a large mixing bowl, combine all-purpose flour and salt. Add the activated yeast mixture, yogurt, and olive oil. Mix until a dough forms.

    Knead

    On a floured surface, knead the dough for about 5-7 minutes until smooth and elastic. Place it in a greased bowl, cover with a damp cloth, and let it rise in a warm place for 1-2 hours until doubled in size.

Stuffing Preparation

    Prepare Filling

    In a skillet, sauté chopped onion in a little oil until translucent. Add spinach and cook until wilted. In a bowl, combine the sautéed mixture with mashed potato, grated cheese, and all spices. Mix well.

Assembly and Cooking

    Divide and Roll

    Once the dough has risen, punch it down and divide it into 4 equal portions. Roll each portion into a circle about 6 inches in diameter.

    Stuff the Naan

    Place a generous amount of filling in the center of each rolled dough circle. Gather the edges to seal the filling inside, and gently flatten it again.

    Cook the Naan

    Heat a skillet or tandoor over medium-high heat. Place the stuffed naan on the skillet and cook for about 2-3 minutes on each side, brushing with butter or ghee, until golden brown.

    Garnish and Serve

    Remove from heat and garnish with chopped cilantro. Serve warm with yogurt or chutney.
