Make the Marinade
In a large mixing bowl, combine the plain yogurt, lemon juice, ginger-garlic paste, garam masala, ground cumin, paprika, turmeric powder, and salt. Mix well until all ingredients are thoroughly combined.

Prepare the Fish
Cut the white fish fillets into chunks of about 2 inches. This will allow them to cook evenly and absorb the marinade.

Marinate the Fish
Add the fish chunks to the marinade and ensure all pieces are well-coated. Cover the bowl with plastic wrap or transfer to a zip-lock bag, and let it marinate in the refrigerator for at least 1 hour, preferably 2-4 hours for maximum flavor.

Preheat the Tandoor or Oven
If using a tandoor, preheat it according to the manufacturer’s instructions. If using an oven, preheat it to 220°C (428°F).

Skewer the Fish
Thread the marinated fish chunks onto skewers. If using wooden skewers, soak them in water for 30 minutes beforehand to prevent burning.

Cook the Fish
Place the skewers in the preheated tandoor or on a baking tray if using an oven. Cook for about 10-15 minutes, turning occasionally, until the fish is cooked through and has a nice char.
