Method

For the Tandoori Chicken

  1. 1

    Marinate the Chicken

In a mixing bowl, combine the plain yogurt, tandoori masala, lemon juice, minced garlic, minced ginger, and salt. Mix well until smooth.

  2. 2

    Prepare the Chicken

Add the chicken thighs to the marinade, ensuring they are well coated. Cover and refrigerate for at least 1 hour, preferably overnight for best flavor.

  3. 3

    Cook the Chicken

Preheat the grill or oven to medium-high heat. Remove the chicken from the marinade and brush lightly with olive oil. Grill for about 6-7 minutes on each side or until fully cooked and internal temperature reaches 75°C (165°F). Let it rest for 5 minutes before slicing.

For the Caesar Salad

  1. 4

    Prepare the Salad Base

In a large salad bowl, combine the chopped romaine lettuce, halved cherry tomatoes, croutons, and grated Parmesan cheese.

For the Caesar Dressing

  1. 5

    Mix the Dressing

In a small bowl, whisk together the mayonnaise, lemon juice, minced garlic, Worcestershire sauce, anchovy paste, salt, and black pepper until smooth. Adjust seasoning to taste.

Assembly

  1. 6

    Combine Everything

Slice the grilled tandoori chicken and arrange it over the prepared salad. Drizzle the Caesar dressing over the top and toss gently to combine before serving.
