Preparing the Samosas

    Make the Dough

    In a large mixing bowl, combine all-purpose flour and a pinch of salt. Gradually add water to make a smooth and firm dough. Cover with a damp cloth and let it rest for 30 minutes.

    Prepare the Filling

    In a pan, heat a tablespoon of oil and add cumin seeds. Once they splutter, add chopped green chilies, boiled potatoes, and green peas. Stir in coriander powder, garam masala, and salt. Cook for 5 minutes and set aside to cool.

    Shape the Samosas

    Divide the rested dough into equal portions. Roll each portion into a thin oval. Cut it in half to form two semi-circles. Take one semi-circle, apply water along the edges, and fold to form a cone. Fill the cone with the potato filling and seal the edges.

    Fry the Samosas

    Heat oil in a deep frying pan over medium heat. Carefully slide the samosas into the hot oil and fry until golden brown and crispy. Remove and drain on paper towels.

Preparing the Channa Masala

    Cook the Onions

    In a pot, heat 2 tablespoons of oil over medium heat. Add chopped onions and sauté until golden brown.

    Add Spices and Tomatoes

    Stir in ginger-garlic paste, and sauté for another minute. Add the pureed tomato, cumin powder, coriander powder, and salt. Cook until the oil separates from the mixture.

    Add the Chickpeas

    Add the boiled chickpeas and water to the pot. Stir well, cover, and simmer for 10 minutes to allow the flavors to meld.

    Finish with Garam Masala

    Stir in garam masala and cook for another 2 minutes before removing from heat.

Assembling the Samosa Chaat

    Combine the Elements

    Place two samosas on a plate, crush them slightly, and spoon the hot channa masala over the top.

    Garnish

    Drizzle yogurt and tamarind chutney over the samosas. Sprinkle chopped coriander leaves and chaat masala on top.
