Method

Cooking the Rice

  1. 1

    Prepare the Rice

Rinse the long-grain white rice under cold water until the water runs clear to remove excess starch.

  2. 2

    Cook the Rice

In a medium saucepan, combine the rinsed rice and 2 cups of water. Bring to a boil over medium-high heat. Once boiling, reduce heat to low, cover, and simmer for about 15 minutes, or until the water is absorbed and the rice is tender.

Making the Pudding

  1. 3

    Combine Ingredients

Once the rice is cooked, add 4 cups of milk, 3 tablespoons of sugar, and 1 teaspoon of salt to the saucepan with the rice.

  2. 4

    Cook the Mixture

Increase heat to medium and cook the mixture, stirring frequently, until it thickens, about 20-25 minutes.

  3. 5

    Add Flavoring

Stir in 1 teaspoon of vanilla extract, 1 teaspoon of ground cinnamon, and 1 cup of raisins (if using). Mix well and cook for an additional 5 minutes.

  4. 6

    Adjust Consistency

If the pudding is too thick, you can add a little more milk to reach your desired consistency.

Serving Suggestions

  1. 7

    Serve and Garnish

Serve the rice pudding warm or chilled, topped with a sprinkle of ground cinnamon and chopped nuts if desired.
