Butter Chicken Preparation

    Cook the Chicken

    Dice the chicken breast into bite-sized pieces. Heat 25 grams of butter in a large pan over medium heat. Add the chicken pieces and cook until browned and cooked through, about 8-10 minutes. Remove from the pan and set aside.

    Sauté the Aromatics

    In the same pan, add the remaining 25 grams of butter. Add chopped onion and sauté until translucent, about 3-4 minutes. Add minced garlic and ginger, cooking for an additional 2 minutes until fragrant.

    Make the Sauce

    Stir in the tomato puree, garam masala, and cumin. Cook for 5 minutes, allowing the flavors to develop. Add the cooked chicken back into the pan.

    Finish the Sauce

    Pour in the heavy cream, stirring to combine. Season with salt and pepper to taste. Simmer for another 5-7 minutes until thickened.

    Prepare the Potatoes

    Peel and cut the potatoes into evenly sized strips for frying.

    Fry the Potatoes

    Heat the vegetable oil in a deep fryer or a large pot to 180°C (350°F). Carefully add the potato strips in batches, frying until golden brown and crispy, about 5-7 minutes per batch. Remove and drain on paper towels, sprinkling with salt to taste.

    Assemble the Dish

    On a plate, layer the hot French fries. Spoon the butter chicken mixture generously over the fries. Top with cheese curds and sprinkle with cilantro to taste.
