Method

Base Preparation

    Combine Milk and Sugar

    In a saucepan, combine the full-fat milk and sugar. Heat over medium heat until the sugar fully dissolves and the milk is warm.

    Add Cornstarch Slurry

    In a small bowl, mix cornstarch with a few tablespoons of cold milk to create a slurry. Once the milk in the saucepan is warm, add this slurry to the saucepan while stirring continuously.

    Cook Until Thickened

    Continue to cook the mixture on medium heat, stirring occasionally, until it thickens slightly. This should take about 10-15 minutes.

    Add Cream and Cardamom

    Remove the saucepan from heat and stir in the heavy cream and cardamom powder. Let the mixture cool to room temperature.

Pista Kulfi Preparation

    Incorporate Pistachios

    Once the base mixture has cooled, add the chopped pistachios to the mixture and stir well.

    Pour into Molds

    Pour the pistachio mixture into kulfi molds or any small cups. Cover with lids or plastic wrap.

    Freeze Kulfi

    Freeze for at least 6-8 hours or overnight until solid.

Mango Kulfi Preparation

    Incorporate Mango Pulp

    For the mango version, follow the same base preparation method as above, but instead of adding pistachios, mix in the ripe mango pulp after the mixture has cooled.

    Pour into Molds

    Pour the mango mixture into kulfi molds or any small cups. Cover with lids or plastic wrap.

    Freeze Kulfi

    Freeze for at least 6-8 hours or overnight until solid.
