Dough Preparation

    Mixing Ingredients

    In a bowl, combine the all-purpose flour and salt. Gradually add water and knead into a soft dough. Add oil and knead for another 2-3 minutes until smooth.

    Cover the dough with a damp cloth and let it rest for at least 30 minutes.

Aloo Stuffing Preparation

    Mixing Ingredients

    In a bowl, mix the boiled and mashed potatoes, green chilies, coriander leaves, cumin powder, garam masala, and salt. Adjust salt to taste.

Onion Stuffing Preparation

    Mixing Ingredients

    In a bowl, mix the sliced onions, green chilies, cilantro, salt, and lemon juice. Set aside to marinate for 10 minutes.

Paneer Stuffing Preparation

    In a bowl, combine the grated paneer, green chilies, coriander leaves, garam masala, and salt. Adjust salt to taste.

Assembling and Cooking

    Rolling the Parathas

    Divide the dough into equal portions. Roll each portion into a small circle. Place a spoonful of your choice of stuffing (Aloo, Onion, or Paneer) in the center and fold the edges over the stuffing to seal. Roll gently into a flat circle.

    Cooking the Parathas

    Heat oil or ghee in a tandoor or skillet over medium heat. Cook the rolled parathas one at a time until golden brown on both sides, about 3-4 minutes per side.

    Serving

    Serve hot with yogurt, pickles, or your favorite chutney.
