Preparation of Dough

Combine Dry Ingredients
In a large mixing bowl, combine lentil flour, black gram flour, chickpea flour, rice flour, cumin seeds, salt, and ground black pepper. Mix well to ensure that all the dry ingredients are evenly distributed.

Add Water
Gradually add water to the dry mixture, stirring continuously to form a smooth dough. The consistency should be firm but pliable. If the dough is too dry, add a little more water, a tablespoon at a time.

Knead the Dough
Knead the dough for about 5 minutes until it becomes smooth and elastic. Cover the dough with a damp cloth and let it rest for at least 30 minutes.

Divide and Roll
After resting, divide the dough into small balls (about the size of a golf ball). On a lightly floured surface, roll each ball into a thin disc, about 2-3 inches in diameter.

Heat Oil
In a deep frying pan, heat the oil over medium heat until it is hot but not smoking. You can test the oil by dropping a small piece of dough into it; if it sizzles and rises to the surface, the oil is ready.

Fry Papadum
Carefully place one rolled disc into the hot oil. Fry for about 30 seconds on each side or until it puffs up and turns golden brown. Remove from the oil and drain on paper towels. Repeat with the remaining discs.
