Preparation

    Prepare the Spinach

    Wash the spinach leaves thoroughly under running water. Boil a pot of water and blanch the spinach for about 2 minutes. Remove and immediately transfer to ice water to retain color. Drain well and set aside.

    Prepare the Paneer

    Cut the paneer into cubes. You can optionally fry them in a little oil until golden brown for added flavor.

    Prepare the Spices

    Chop the onion, garlic, ginger, green chili, and tomato finely. Set aside.

Cooking

    Make the Spinach Puree

    In a blender, blend the blanched spinach into a smooth puree. Set aside.

    Cook the Base

    In a pan, heat the cooking oil over medium heat. Add cumin seeds and allow them to sputter. Then, add the chopped onions and sauté until they turn golden brown.

    Add Aromatics

    Next, add the chopped garlic, ginger, and green chili to the pan. Sauté for another 2 minutes until fragrant.

    Combine Ingredients

    Add the chopped tomato, turmeric powder, and salt to the pan. Cook until the tomato softens.

    Add Spinach Puree

    Stir in the spinach puree, mix well, and let it simmer for 5 minutes.

    Finish with Paneer

    Add the paneer cubes and garam masala to the spinach mixture. Stir gently and cook for an additional 5 minutes. If using, drizzle the cream on top before serving.
