Preparing the Fries

    Cutting the Potatoes

    Wash and peel the potatoes. Cut them into evenly sized sticks, about 1/4 inch thick, to ensure even cooking.

    Soaking the Potatoes

    Place the cut potatoes in a bowl of cold water for at least 30 minutes to remove excess starch. This will help achieve crispier fries.

    Drying the Potatoes

    After soaking, drain the potatoes and pat them dry with a clean kitchen towel to remove excess moisture.

Frying the Fries

    Heating the Oil

    In a large pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). Use a thermometer for accuracy.

    Frying the Potatoes

    Carefully add a batch of the dried potato sticks to the hot oil, making sure not to overcrowd the pot. Fry for about 5-7 minutes or until they are golden brown and crispy.

    Draining the Fries

    Use a slotted spoon to remove the fries from the oil and place them on a paper towel-lined plate to drain excess oil.

Seasoning the Fries

    Mixing the Masala

    In a small bowl, combine the ground cumin, ground coriander, turmeric powder, chili powder, garam masala, salt, and black pepper.

    Seasoning the Fries

    While the fries are still hot, sprinkle the masala seasoning evenly over them. Toss gently to coat all fries evenly in the spices.
