    Begin by washing the ripe mangoes. Peel and dice them into small pieces. Finely chop the onion, mince the garlic cloves, and grate the ginger.

    Slice the boneless beef into thin strips, about 1/4 inch thick. This will help in quick cooking and better absorption of flavors.

    In a bowl, combine the sliced beef with soy sauce, salt, black pepper, and cornstarch. Mix well to ensure the beef is evenly coated. Let it marinate for at least 15 minutes.
