Marinade

Method

Preparation

  1. 1

    Prepare the Marinade

In a large mixing bowl, combine yogurt, ginger-garlic paste, garam masala, cumin powder, coriander powder, red chili powder, lemon juice, salt, and oil. Mix well until all ingredients are thoroughly combined.

  2. 2

    Marinate the Chicken

Cut the boneless chicken breasts into bite-sized pieces and add them to the marinade. Ensure each piece is well-coated with the marinade. Cover the bowl with plastic wrap or a lid and refrigerate for at least 2 hours, preferably overnight for best results.

Cooking

  1. 3

    Preheat the Tandoor or Grill

Preheat your Tandoor or grill to a high temperature (around 200-250°C / 400-480°F).

  2. 4

    Skewering the Chicken

Thread the marinated chicken pieces onto metal or soaked wooden skewers, ensuring they are evenly spaced.

  3. 5

    Grilling the Chicken

Place the skewers in the preheated Tandoor or grill. Cook for about 15-20 minutes, turning occasionally until the chicken is cooked through and has a nice char. The internal temperature should reach 75°C (165°F).

  4. 6

    Rest and Serve

Once cooked, remove the skewers from the grill and let the chicken rest for a few minutes. Serve hot with mint chutney and lemon wedges.
