Preparation of Lamb

    Marinate the Lamb

    Cut the boneless lamb into bite-sized pieces and place them in a mixing bowl. Add yogurt, minced garlic, grated ginger, green chilies, cumin seeds, coriander powder, turmeric powder, garam masala, and salt. Mix well and let it marinate for at least 1 hour, preferably overnight in the refrigerator.

    Cook the Onions

    In a large pot or deep skillet, heat vegetable oil over medium heat. Add finely chopped onions and sauté until golden brown, about 8-10 minutes.

    Cook the Lamb

    Add the marinated lamb and cook on medium-high heat for about 5 minutes, stirring occasionally. Then, reduce the heat to low, cover, and simmer for about 45 minutes or until the lamb is tender and cooked through.

Preparation of Mint Sauce

    Blend the Sauce Ingredients

    In a blender, combine mint leaves, cilantro leaves, lemon juice, green chili, salt, and water. Blend until smooth. Adjust salt and lemon juice to taste.

Serving

    Serve the Lamb Pasanda

    Once the lamb is cooked, remove from heat and let it rest for a few minutes. Serve hot with mint sauce on the side and garnish with fresh mint or cilantro if desired.
