Preparation

    Prepare the Spinach

    Blanch the chopped spinach in boiling water for 2-3 minutes until wilted. Drain and immediately transfer to ice water to stop cooking. After a few minutes, drain again and blend into a smooth paste. Set aside.

    Marinate the Lamb

    In a bowl, mix the lamb cubes with turmeric powder, coriander powder, and salt. Set aside for 15 minutes to marinate.

    Sauté Aromatics

    Heat oil in a large pan over medium heat. Add cumin seeds and let them sizzle for a few seconds. Then add chopped onions and sauté until they turn golden brown.

    Add Garlic and Ginger

    Stir in the minced garlic, grated ginger, and slit green chili. Sauté for another 1-2 minutes until fragrant.

    Cook the Lamb

    Add the marinated lamb to the pan. Cook for about 5-7 minutes until the lamb is browned on all sides.

    Add Spinach and Simmer

    Reduce the heat to low and add the spinach paste to the lamb. Stir well, cover the pan, and let it simmer for about 20-25 minutes until the lamb is tender.

    Finish with Garam Masala

    Once the lamb is cooked, stir in the garam masala and adjust the seasoning with salt if needed. Cook for an additional 2 minutes.

Serving

    Garnish and Serve

    Serve hot, garnished with chopped cilantro and lemon wedges on the side.
