Prepare the Lamb
Cut the boneless lamb into bite-sized pieces and season with salt and black pepper. Let it marinate for at least 30 minutes.

Cook the Aromatics
In a large skillet or pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Add the minced garlic and grated ginger, and cook for an additional 1-2 minutes until fragrant.

Brown the Lamb
Increase the heat to medium-high and add the marinated lamb pieces to the skillet. Sear the lamb until browned on all sides, about 6-8 minutes.

Add Mango and Coconut Milk
Stir in the diced mango and curry powder, mixing well. Pour in the coconut milk and bring the mixture to a simmer.

Simmer the Dish
Reduce the heat to low, cover the skillet, and let it simmer for 20-25 minutes, stirring occasionally, until the lamb is tender and the sauce has thickened.

Once cooked, remove from heat and garnish with fresh cilantro. Serve hot with rice or naan.
