    Prepare the Meat

    Cut the lamb shoulder into cubes, ensuring they are roughly the same size for even cooking.

    Chop the Onion

    Finely chop the onions and set them aside for later use.

    Grate Ginger and Mince Garlic

    Grate the fresh ginger and mince the garlic cloves, combining them in a small bowl.

    Sauté Onions

    In a large pot or Dutch oven, heat some oil over medium heat. Add the chopped onions and sauté until they become translucent and golden, about 8-10 minutes.

    Add Ginger and Garlic

    Stir in the grated ginger and minced garlic, cooking for an additional 2-3 minutes until fragrant.

    Add Spices

    Add the ground cumin, ground coriander, turmeric powder, garam masala, chili powder, salt, and black pepper to the pot. Stir well to combine and toast the spices for 1-2 minutes.

    Brown the Lamb

    Add the cubed lamb to the pot, stirring to coat the meat in the spice mixture. Cook for about 5-7 minutes until the lamb is browned on all sides.

    Add Tomato Puree and Coconut Milk

    Stir in the tomato puree, then pour in the coconut milk. Bring the mixture to a simmer.

    Simmer the Curry

    Reduce the heat to low, cover the pot, and let the curry simmer for 1.5 to 2 hours, or until the lamb is tender and the flavors meld together. Stir occasionally.

    Once the lamb is tender, taste the curry and adjust seasoning if necessary. Serve hot, garnished with chopped cilantro and lemon wedges on the side.
